A simple twist to the trendy avocado toast, this sweet potato, avocado and egg “TOAST” will leave you wanting more! I have been eating avocado toast practically every morning for the last 4 years, but this is my new FAVE! Avocado toast is trending all over, and for good reason….it’s damn delicious! I normally do mine on sourdough toast or gluten-free bread, but I stumbled upon this idea, and just had to try it. WOW! Is it weird that I dream about this dish all the time? I’m serious…I could eat it for breakfast, lunch and dinner!
Preheat oven to 400 F. Wash and slice the sweet potato into thin slices. I am obsessed with my mandolin slicer and find it does the job super quick, giving me the perfect thickness!
Place sweet potato slices onto a baking sheet lined with parchment paper, drizzle with avocado oil and season with sea salt. Bake for 20 min, turning halfway through.
Meanwhile, bring a pot of water to a boil and add eggs (in shell) boiling for 6 minutes. Remove from heat and drain hot water, then rinse with cool water. Remove shells and set soft-boiled eggs aside.
To assemble, slice avocado, tomatoes and basil. Place cooked sweet potato onto plate and layer the avocado, eggs and tomatoes. Sprinkle with basil, salt and pepper. ENJOY!!
For my carnivore husband, I made his extra special (see pic below! ) Instead of the sweet potato I did gluten-free bread, shredded pork (left over from last night) and added some salsa, avocado and eggs with a touch of chive.
